I have mine wound on 2x4 or 2x8 cardboard pieces, sorted by color in Rubbermaid sweater boxes - makes it easy to find what I need quickly. I like the tube idea, but I have too many...

I keep my "leftover" binding pieces in a ziploc bag for the day when I make a scrappy quilt I'm going to use those pieces for the binding. "New" bindings are rolled around my hand into a neat roll and stored with the quilt top until it is quilted.

I store my bindings on empty toilet paper rolls or empty paper towel rolls.

I have mined stored in plastic containers, rolled onto pieces of cardboard or stuffed into plastic sandwich bags.

I save mine like you do. I really try to make plenty but not tooooo much, so then I really don't have much to save. But it sure it nice to have a stash ready to go that is just right every once in a while.

I also wind binding strips around the empty TP tubes.

I have some wooden cigar boxes that seem to contain things nicely. I don't make bindings ahead of time, just for the project at hand. I do save the little leftovers in a plastic bag for students who would like to try a narrower binding than most use.

my trims are wrapped around an empty fabric bolt...bindings are 2 1/2" wof strips in a plastic bin waiting to become a quilt or binding.

I roll my bindings like a jelly roll and store them in a plastic bin. Then when I am ready to use them I just find that bin.

I save the cardboard tubes from gift wrap, and roll my bindings around the tube. You can fit quite a few bindings on each tube. Or I bring home the cardboard flat that fabrics are wrapped around - the stores throw them away - and wrap bindings around those as well. I straight pin the end to the rolled binding to keep it in place. They can be stored upright, not take up a lot of space, and esp with the round gift wrap rolls, keep their shape and don't have any fold marks in them when I unwind them for use.
